Capsaicin and the Burn Factor

Why do peppers set your mouth on fire? The answer lies in a compound called capsaicin. Found in the white pith of the pepper, capsaicin is designed as a natural defense mechanism to discourage animals from eating peppers. Birds, interestingly, are immune—helping spread pepper seeds far and wide.

Capsaicin binds to TRPV1 receptors in your mouth, which are the same receptors that sense heat from a flame. Your brain gets tricked into thinking your mouth is burning, even though no physical damage is being done. That’s why you break into a sweat or even hiccup after a spicy bite—it’s your body reacting to the “false alarm.”

But here’s the fun part: capsaicin also triggers endorphins, your body’s natural “feel-good” chemicals. That’s why chili-heads describe spice as addictive—because it actually is! And the hotter the pepper, the higher the concentration of capsaicin, which is measured in Scoville Heat Units (SHU).
